It’s winter in Canada and we have been experiencing well below freezing temperatures! Perfect weather for some delicious vegan chilli… This recipe will not disappoint! (and don’t worry, it is very low maintenance).

- 1/2 White Onion, diced.
- 3 large stocks of Celery, diced.
- 1 large can of Tomatoes
- 4 Bell Peppers, diced.
- 1 can Black Beans.
- 1 large can Kidney Beans
- 1 can Aduki Beans
- 1 cup Organic Vegetable Broth
- 3 tablespoon Chilli Spice
- 2 tablespoon Paprika
- Chili Flakes
- 4 Fresh Garlic Cloves, diced.
- 2 teaspoon Extra Virgin Olive Oil
- Handful of Spinach
*In a large pot sauté the onion, celery, garlic in the olive oil.
*Add everything else
*Bring to a boil and then let simmer for 1 hour
*Use a potato smasher to smash everything together *THIS IS A MUST for the perfect texture
*Add spinach at the very end just before serving
